How To Make Blueberry French Toast Bake

This Blueberry French Toast Bake is an easy, crowd-pleasing breakfast that feels a little bit special. Soft brioche slices soak up a vanilla custard, then bake until golden with juicy bursts of fresh blueberries. It is simple to assemble, great for feeding a group and perfect for slow weekend mornings or relaxed brunches. Serve warm with maple syrup and extra blueberries for the perfect finish.

Ingredients
  • 1 sliced brioche loaf (about 500g)

  • 250g fresh blueberries

  • ¼ cup of The Good Oil extra virgin rapeseed oil

  • 6 large eggs

  • 350ml milk

  • 250ml cream

  • 2 tbsp caster sugar

  • 2 tsp vanilla extract

  • ¼ tsp salt

  • ¼ cup sliced almonds

  • 2 tbsp demerara sugar

  • Optional toppings: extra blueberries, maple syrup, jam

Method
  • Preheat oven to 180°C and grease a 20x30cm (or similar) baking dish. Cut the brioche slices to fit the dish and arrange them in a slightly overlapping pattern. Scatter half of the fresh blueberries evenly over the brioche, gently tucking some between the slices.

  • In a medium bowl, whisk together the oil, milk, cream, eggs, caster sugar, vanilla and salt until smooth. Pour the custard evenly over the brioche and blueberries, pressing gently on the bread to help it absorb the liquid. Let it sit for 30 minutes.

  • Bake for 25 minutes, then remove from the oven and scatter over the almonds and demerara sugar. Return to the oven and bake for a further 10-15 minutes, until the top is golden and the custard is set in the centre.

  • Allow to cool for 10 minutes before serving. Drizzle with maple syrup and sprinkle with the remaining blueberries.
