How To Make Ham, Cheese & Relish Muffins

Fluffy, cheesy, and packed with flavour – these savoury muffins are loaded with ham and tasty cheese, with a hidden spoonful of relish in the centre. Use your favourite variety – sweet onion relish, tomato chutney, or capsicum relish all work beautifully. Made with The Good Oil extra virgin sunflower oil, they’re soft, moreish, and perfect for lunchboxes, picnics, or an easy snack anytime.

Ingredients
  • 350g plain flour

  • 1 tbsp baking powder

  • 1 tsp salt

  • ½ tsp black pepper

  • 2 large eggs

  • 1 cup milk

  • ½ cup plain yoghurt

  • ½ cup The Good Oil extra virgin sunflower oil

  • 150g grated tasty cheese (plus an extra handful for topping)

  • 250g sliced ham, roughly chopped

  • 3 spring onions, finely sliced

  • ½ cup onion relish or chutney (Or any relish of your choice!)

  • 1 tbsp pumpkin seeds

  • 1 tbsp sesame seeds

Method
  • Preheat oven to 180°C. Line a 6-hole Texas muffin tin with paper cases (or use a standard muffin tin if preferred). In a large bowl, whisk together the flour, baking powder, salt and pepper.

  • In a separate bowl, whisk together the eggs, milk, yoghurt and oil.

  • Pour the dry ingredients into the wet and mix gently until just combined. Add the cheese, ham, and spring onions and fold to mix through. Spoon half the batter into the muffin cases (about 1 heaped tablespoon per case). Add a teaspoon of onion relish into the centre of each muffin, then cover with the remaining batter.

  • Top each muffin with a little extra grated cheese and a sprinkle of pumpkin and sesame seeds. Bake for 20–25 minutes, or until golden and a skewer inserted into the muffin (not the relish) comes out clean.

  • Cool in the tin for 5 minutes before transferring to a wire rack.
