How To Make Kimchi, Ham & Cheese Toasties

Golden, gooey and full of flavour, these Kimchi, Ham & Cheese Toasties are the ultimate comfort food with a twist. Tangy, spicy kimchi cuts through the richness of melted cheese and savoury ham, creating the perfect balance of bold and comforting flavours. Frying the sandwiches in a mayo and The Good Oil Extra Virgin Sunflower Oil mix gives a perfectly crisp, golden crust while the inside stays soft. Ready in minutes, this quick and easy toastie recipe is ideal for lunch, dinner, or a late-night craving!

Ingredients
  • 1 cup kimchi, roughly chopped

  • 2 spring onions, finely sliced

  • 2 tsp The Good Oil Extra Virgin Sunflower Oil (plus extra for frying)

  • 4 slices bread of your choice

  • 4 tbsp mayonnaise

  • 2 tsp Dijon or wholegrain mustard

  • 200g sliced ham

  • ⅔ cup grated cheddar cheese

  • ⅓ cup grated mozzarella cheese

Method
  • Heat two teaspoons of oil in a small frying pan over medium heat. Add the kimchi and spring onions, and cook for 2-3 minutes until fragrant and most of the moisture has evaporated. Set aside to cool slightly.

  • In a small bowl, mix half the mayonnaise with the mustard. Spread this evenly over two slices of bread. Divide the kimchi mixture between the prepared bread slices. Top each with ham, then scatter over both cheeses. Place the remaining bread slices on top to close the two sandwiches.

  • In another small bowl, whisk the remaining mayonnaise with a good drizzle of oil. Spread this over the outside of the top slice of each sandwich.

  • Heat a non-stick frying pan over medium-low heat. Place the sandwiches in the pan, mayo-side down, and cook for 3-4 minutes until golden. Spread the mayo-oil mix over the top slices, flip, and cook the other side, pressing down lightly with a spatula, until the bread is crisp and the cheese is fully melted.

  • Slice in half and serve immediately while hot and gooey.
