How To Make Chewy Peanut Butter & Chocolate Oatmeal Bars

Chewy, nutty and studded with dark chocolate chunks, these oaty bars are quick to make and perfect for snacks or lunchboxes. A mix of brown and white sugar gives them just the right softness, while roasted peanuts on top add to that delicious nutty crunch.

Ingredients
  • 1 cup plain flour
  • 1½ cups rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup The Good Oil extra virgin sunflower oil
  • ½ cup brown sugar, packed
  • ½ cup caster sugar
  • 2 eggs
  • ½ cup smooth peanut butter
  • 2 tsps vanilla extract
  • 150g dark chocolate, roughly chopped (reserve a small handful for topping)
  • ¼ cup roasted peanuts
Method
  • Preheat the oven to 175°C. Line a 20cm x 30cm slice tin with baking paper. In a large bowl, whisk together the flour, oats, baking powder, baking soda and salt.
  • In another bowl, whisk the oil, brown sugar, white sugar, eggs, peanut butter and vanilla until smooth and well combined. Add the dry ingredients to the wet with most of the chopped dark chocolate, and fold in until just combined.
  • Spread the mixture evenly into the prepared tin. Press the remaining chocolate and the peanuts into the top. Bake for 25 minutes, or until risen and just golden around the edges. Cool in the tin before slicing into bars.
