How To Make Italian Sausage & Capsicum Pasta

Ingredients
- 1 tbsp The Good Oil Extra Virgin Rapeseed Oil
- 300 g italian sausages (pork)
- 1 capsicum (choose different colours) sliced
- 1 zucchini (less if large)
- ½ onion thinly sliced
- 1 clove of garlic crushed
½ 400g can of chopped tomatoes
- ½ tsp dried oregano
- 200 g penne pasta
- 6 tbsp grated Parmesan cheese
- ½ handful fresh basil roughly chopped
Method
- Heat a large, deep frying pan over medium heat. Add a splash of oil.
- Add the sausages to the pan. Cook them until they’re browned on all sides, about 5-7 minutes. Once well coloured (they don’t need to be cooked through0, remove them from the pan and set aside to cool slightly. Slice into bite-sized pieces.
- While the sausages are cooling, in the same pan, add a little more oil and add the onion and cook for about 3 minutes and then add the capsicum, zucchini and garlic.
- Cook for 5 minutes, stirring occasionally.
- Return the sliced sausage to the pan. Add the canned chopped tomatoes, dried oregano, and season with salt and pepper.
Reduce the heat to low, cover, and simmer for 15-20 minutes, stirring occasionally.
- At the same time bring a large pot of salted water to the boil and cook the pasta according to packet instructions.
- Divide the pasta between shallow bowls. Top with the sausage and vegetable mixture. Sprinkle with Parmesan and basil leaves.
