Indulge in a delightful Chicken Gyros featuring marinated chicken, roasted veggies, and crispy oven fries, all wrapped in warm Lebanese bread and drizzled with a flavorful garlic yogurt sauce. It’s a quick, easy, and delicious meal!

Ingredients
  • 1 tbsp The Good Oil Extra Virgin Rapeseed Oil
  • ½ tbsp lemon juice
  • 1 tsp dried oregano
  • ½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp ground coriander
  • 250 g chicken breasts (boneless, skin on) chopped into 3cm chunks
  • ½ red capsicum thinly sliced
  • ½ orange capsicum thinly sliced
  • ½ red onion thinly sliced
  • 150 g oven fries
  • 2 Lebanese breads
  • ¼ iceberg lettuce shredded (use less if large)
  • ¼ telegraph cucumber chopped
Garlic Yoghurt
  • ¼ C natural yoghurt
  • ½ clove of garlic crushed
Method
  • In a shallow dish, mix together the oil, lemon juice, oregano, cumin, paprika, coriander along with a sprinkle of salt and pepper. Add the chicken and ensure it is well coated. Refrigerate for at least 30 minutes if you can.
  • Heat the oven to 200°C
  • In a large roasting dish toss the chicken with the capsicum, onion and fries. Toss to coat evenly.
  • Bake for 25 minutes or until the fries are golden and the chicken cooked through.
  • While the chicken is cooking, mix together the yoghurt and garlic in a small bowl, season to taste with salt.
  • When the contents of the pan are just about ready, warm the Lebanese bread in the oven.
  • To serve, lay out each piece of Lebanese bread and place a layer of lettuce leaves and cucumber in the centre.
  • Add a generous amount of sliced chicken, roasted vegetables, and fries.
  • Drizzle with garlic yoghurt sauce, wrap and serve.
